The Macronutrient Issue

President's Message

This issue focuses on the topic of macronutrient values and shines a light on the firmly held notion that we should limit fat intake to 30 percent or less of total calories. We will see that not only is this dictum arbitrary and capricious, but also has served to lead us down the four-lane highway to processed and imitation foods.

When we are eating whole foods, including enough fats to make those foods tasty, tender and satisfying, caloric values of fat usually range between 40-60 percent, as in traditional diets. Lowering the amount of fat calories to 30 percent of the total requires considerable reshaping of the diet into one that does not resemble the way people have always eaten.

The only way a modern day Alice can save herself from the nonsensical Wonderland of establishment dictates is to understand the hidden agenda behind them and embrace a diet of real food.

The cholesterol theory of heart disease has been a major propaganda weapon used to reshape American eating habits during the last fifty years. We will be taking this issue head-on at our upcoming conference May 3-5, 2003. We have an all-star lineup including Dr. Uffe Ravnskov, author of The Cholesterol Myths, Dr. Paul Rosch, President of the American Society of Stress and our own Dr. Mary Enig. We are also very honored to present Dr. Kilmer McCully, a brilliant biochemist whose research on homocysteine and heart disease has actually been recognized by the mainstream medical stablishment.

We will also have three tracks of speakers on Sunday, including favorites like Krispin Sullivan and Julia Ross, as well as newcomers like Dr. Ted Spence, Dr. Ken Morehead, Dr. Ron Schmid and Charles Eisenstein.

On Monday, Bill Sanda will accompany those attendees who wish to meet with their Congressmen to discuss the issue of soy infant formula. And for those new to our work, I will be presenting my Seminar on Nourishing Traditional Diets on Monday, March 5.

Now is the time to be making plans to attend. The location is the beautiful Sheraton National Hotel in Arlington, Virginia, close to Washington National Airport. We have secured room rates that are very reasonable for the Washington area. Best of all, the hotel allows us to bring in our own caterers, so Chef John Umlauf and the Basic Feast Caterers will be preparing two luncheon meals and a delicious banquet dinner on Saturday evening.

As this year draws to a close, we wish to thank you for your support in this David-and-Goliath battle to bring some common sense back into the subject of nutrition and human diets. May the year 2003 be filled with health and accomplishment for all.
