The Milk Book: The Milk of Human Kindness Is Not Pasteurized

No one has done more to keep the issue of raw versus pasteurized milk alive than the indefatigable William Douglass, maverick Georgia physician and gadfly to medical orthodoxy. Now republished in soft cover, The Milk Book's entertaining prose will make you laugh -- and cry as well -- at the destruction of what once kept Americans healthy and strong: whole raw milk from pasture-fed cows.

"If you listen to the advertising of the dairy industry," writes Douglass, "one gets the impression that milk is the perfect food and if you don't stoke your children with at least a quart of milk a day (each), you are guilty of child abuse or at least neglect." (Quack buster Victor Herbert has, in fact, stated exactly that...in reverse--that mothers who give their children raw milk are guilty of child abuse!) "On the other hand, some nutritionists, medical organizations, government agencies and doctors warn of the dangers of fat and cholesterol in milk and milk products." Milk has been accused of causing everything from allergies to osteoporosis.

The problem, as Douglass points out, is with American milk, milk that has had the life removed by the pasteurization process. Douglass details how pasteurization removes all the enzymes in milk (necessary for digestion and assimilation); makes the proteins less available; and creates vitamin losses. Pasteurization destroys friendly bacteria and allows pathogenic bacteria to proliferate. No herd inspections are carried out where milk is pasteurized -- nor are employee health inspections required.

Clean raw milk from certified healthy cows is legally available in stores in only two states -- Georgia and California. In other states, consumers must go directly to the farm or do without. Let's hope that the publication of The Milk Book will encourage increased consumer demand for quality raw milk products, and create grass roots pressure to make wholesome milk available in every state of the union.
