The menu was carefully created by Amanda Love, The Barefoot Cook, and Sally Fallon Morell to underscore the educational messages presented at the conference.
Like last year, our teaching does not stop at the classroom door, we teach in the kitchen too. Amanda will provide a WAPF Workshop to the kitchen and serving staff prior to our arrival. Learning the basic principles not only helps them understand our group’s needs, but may encourage them to think differently about what they are feeding themselves, and other patrons in the future.
Amanda will also lend her special touches to our meals, as she works behind the scenes with the Chef and kitchen staff. As you can imagine, our donated nutrient dense ingredients are a radical departure from the usual ingredients used in most institutional kitchens. Even the basics- salt, sugar and flour are different!
