According to raw milk expert Dr. Ted Beals, consumers are about
thirty-five thousand times more likely to get sick from other foods than they are from raw milk.29 Informed consumers are aware of the true risk-benefit ratio of consuming raw milk from farms employing diligent practices. Despite government attempts to intimidate farmers and con- sumers through police and regulatory actions, authorities in the U.S. and elsewhere have not been able to stem the tide of the raw milk movement, which continues to spread. The rising popularity of raw milk vending machines and direct farm-to-consumer sales reflects a strategic business model that is helping many dairy farmers not only stay in business but make a reasonable living.30
