This batter can be used for pancakes or waffles. Start with einkorn sourdough batter that is more dough-like in consistency since the amount of eggs will thin the batter. These also freeze well with parchment paper dividers and can even be reheated in the toaster.
Ingredients
- 4 cups active sourdough
- 6 pastured eggs
- 1/2 cup coconut flakes
- 1/3 cup coconut oil
- 2 tsp cinnamon
- 1 Tbsp vanilla
- 2 scoops gelatin
Mix all together. Using a small ladle, ladle onto preheated buttered cast iron griddle or ceramic griddle, and cook. Serve with melted fresh butter, syrup or fruit of choice.

What purpose does the gelatin serve? It seems like it would have a nicer consistency without it, so I am wondering. But also, what is the measurement for “2 scoops”?

there are many benefits of gelatin such as helping absorb minerals; skin and joint health; helps with inflammation, etc.
2 scoops = approx 1/8-1/4 cup.

I am aware of the benefits of gelatin and use it often, but 1/8-1/4 cup is a quite a lot, and a wide range. I haven’t made this exact recipe (although often have made sourdough or soaked pancakes with a variety of grains), but doesn’t the gelatin make it gummy?

with the amount of sourdough and eggs, the 1/8-1/4 cup isn’t that much. You can substitute collagen instead. Or just leave it out if you’re able to get enough collagen/gelatin in your day via bone broth. Most people don’t so that’s why I include it.

in the ’70’s i soaked hard red winter wheat and when the sprouts show up I put it in blender for family of 5 added some of the sprout liquid eggs tad milk opt salt b. pdr and small amount of oil. I have just started it again but even the best grain does not react the way it did in the ’70’s disappointing

Diana, you might try ordering from Small Valley Milling out of Pennsylvania. They carry a variety of organic grains which they grow on their pristine family farm, and I buy all of my grains from them directly. I have always had good success with sprouting anything I’ve purchased from them! Other suppliers may sell irradiated grains, which would not sprout well, if at all.
