Thomas Cowan, MD: Fever A Child’s Best Friend Modern medicine tries to suppress fever in children, but these efforts interrupt the child’s own mechanism for stimulating the immune system. Many studies show that allowing fever to run its course actually aids children in speedier recoveries. Critics of fever suppression argue that without childhood fevers, children are more prone to cancer later in life.
Recovery with Low-Dose Naltrexone: Created in the late 1970s as a drug to treat heroin overdose, naltrexone used in low doses is being used successfully to treat auto-immune disease, even cancer and multiple sclerosis. Used in very low doses, naltrexone stimulates increased production of endorphins, the body’s feel-good chemicals, which in turn strengthens the immune system. This lecture will explain the theory behind low-dose naltrexone therapy and its practical application.

Robert Disney: Emerging waste water contaminants. The theme this year is myth busters. Municipally supplied water to your tap is safe to drink – fictitious or factual? Municipal water has been treated to improve the quality and make it micro-biologically safe to drink as verified by those annual tests which are sent to users. There are other contaminants, for which no test is required and which are not being removed. These will collectively be referred to as emerging contaminants and this will be the subject of this presentation.
Sally Fallon Morell: Healthy Pregnancy In addition to attention to diet, pregnant women confront many challenges to the health of the baby in the womb, and they face many important decisions. Modern medicine promotes drugs and vaccinations for pregnant women, pre-natal screening, antibiotics for staph aureus and a host of other interventions that could jeopardize the optimal development of the infant. This talk presents the many challenges to the pregnant women with an emphasis on good nutrition for protection against the dangers that she cannot avoid.
Jacques Goulet agr. Ph.D.: The importance of trace minerals and micro-adjuvants in nutrition and health
Most nutritional recommendations for the average North American consumer refer to governmental food guides or various Mediterranean type diets. Much of the research money devoted to human nutrition relates to various health problems that are presented to be strongly correlated to certain types of foods (too high in sugar, fats, cholesterol, saturated fatty acids, trans fatty acids, sodium,…) or poor food habits (too large portions and too much fast food).
On the other hand, most recommendations in the field of animal nutrition, where the level of scientific knowledge is much more advanced and reliable (for obvious reasons) than in human nutrition, deal with mineral and vitamin supplements as well as with adjusted ratios of protein, energy and fibers.
Very rarely do we hear that common health problems in human populations could be related to a lack of several micro-nutrients or micro-adjuvants and to the unbalance of the intestinal microflora.
In this presentation we will review some of the latest data suggesting that we might presently be at risk of lacking several essential micronutrients and developing nutritional deficiencies.

Paul Jaminet, PhD: The Recipe for Human Health: Why Diet and Nutrition are the Key to Health and the Best Therapy for Disease
Science has taken many wrong turns in thinking about diet and health. Twentieth century science endorsed industrial foods and pharmaceutical approaches to therapy that have largely failed. However, a new scientific synthesis is emerging that suggests that diet, nutrition, and infections are the key factors affecting human health and pointing toward traditional diets, developed originally during the Paleolithic, as effective therapies for many human diseases.
The session will be divided into two parts. In Part I, Paul will discuss the recipe for a healthy human: what are the foods and nutrients that a diet ought to contain, and the foods and toxins that should be avoided, to optimize human health. In Part 2, Paul will discuss how dietary and lifestyle practices can eliminate the primary causes of disease, enhance immunity, and, along with antimicrobial medicines, cure or prevent most diseases.
Sharon Kane: Art of Gluten-Free Sourdough Baking Creating a nutrient-dense, properly fermented Gluten-Free sourdough bread made from only pure food ingredients is possible!! Sharon will discuss and demonstrate the differences in technique between her Gluten-Free Sourdough Technique and traditional wheat and rye sourdough techniques. She will demonstrate how to create, maintain and work with gluten-free sourdough starters made with various flours. She will also demonstrate the simple techniques that make successful gluten-free sourdough breads and muffins. We will talk about the properties of gluten-free flours and what each contributes to the finished sourdough product.
Jules Klapper: Dirty Electricity: The 21st Century Scourge
Up until recently, 60 Hz fields supplied by the power company were thought to be a major culprit for stressing the body. While these fields do cause problems for some people, they “fall off the square of the distance,” which means that simply moving yourself away from the field, and/or the source away from you, can solve that problem. Yet many people were still stressed out by EMFs. A more recent discovery found out why: There is another, much more dangerous field: radio frequency or “dirty electricity,” caused by an interaction between items people plug into an outlet and the 60 Hz fields supplied by the power company. These fields do not fall off the square of the distance and use your entire wiring system as an antenna.
We will explore dirty electricity, how it affects the body and how we can mitigate the problem.

Chirs Masterjohn: Good Fats, Bad Fats: Separating Fact From Fiction
In the modern era, the nutritional establishment has created the tall tale of a mythical transition from a low-fat diet associated with poverty to a high-fat diet associated with affluence and has considered this mythical increase in fat intake to be the scourge of modern, disease-producing diets. The establishment has likewise promoted the use of polyunsaturated vegetable oils to supply our needs of “essential fatty acids” and to lower blood cholesterol. Others have maintained with equal vigor that using large amounts of fat is necessary to displace harmful carbohydrates, and that this is the key to vibrant health. Traditional, health-promoting diets, however, varied widely in their composition, some being very low in fat, others deriving over 50 percent of their calories from saturated fat alone. Healthy, non-pregnant, non-lactating adults require essential fatty acids in infinitesimal amounts. Growing children, pregnant or lactating women, and adults who are recovering from injury or suffering a degenerative disease require greater amounts of these fatty acids, but acquire them best from animal products. The use of vegetable oils likely promotes heart disease despite lowering cholesterol. Saturated and monounsaturated fatty acids play essential roles in our bodies, but we can synthesize them from carbohydrate, an option on which many healthy groups have relied. Fats provide essential nutrients and aid in the absorption of nutrients from other foods. It is the overall nutrient density and nutrient bioavailability of the diet, however, and not the specific content of fat, that produces health.
Vitamin K: Ancient Wisdom, Modern Research
Weston Price documented the prized role that certain animal foods played in health-promoting, traditional diets. In 1945, he described “a new vitamin-like activator” that played an influential role in the utilization of minerals, protection from tooth decay, growth and development, reproduction, protection against heart disease, and the function of the brain. He called this compound “activator X” and demonstrated its presence in butterfat, the organs and fats of animals, and sea foods such as fish eggs. Modern research suggests that this activator is in fact vitamin K2. Vitamin K2 is produced by animal tissues, including the mammary glands, from vitamin K1, a precursor found abundantly in the leaves of rapidly growing green plants. Vitamin K2 is also produced by fermentation, and thus is present in fermented foods from both animal and plant sources. Research suggests that humans can obtain a part of the vitamin K requirement from green plant foods, but should acquire vitamin K from a range of sources, including fatty animal foods, for optimal health. Vitamin K works synergistically with the two other “fat-soluble activators” that Price studied, vitamins A and D. Vitamins A and D signal cells to produce certain proteins and vitamin K then activates these proteins. Newer research suggests that the specific form of vitamin K2, menaquinone-4, that is produced by animal tissues plays its own role in cell signaling. This lecture will summarize the evidence presented in Chris’s landmark 2007 article, “On the Trail of the Elusive X-Factor,” and will review evidence that has emerged over the subsequent four years.
Richard Maurer, MD: How to Understand, Reveal and Treat People with Insulin Resistance Over 30% of Americans currently have the condition Insulin Resistance, aka metabolic syndrome or pre-diabetes. While there is the possible end-point of diabetes, insulin resistance itself is an underlying cause of hypertension, elevated lipids, fatty liver, arthritis, inflammation, weight gain and obesity. When understood and interpreted correctly, physical evaluation and basic blood tests reveal this condition and help track its cure.
The cure of insulin resistance, and all its associated conditions, relies on the cliché of diet and exercise. We will explore the FatBack Diet, a higher fat traditional diet and the positive changes that occur in one’s metabolism and blood test findings. We will review the home-use of body fat calipers to diagnose the condition and assess treatment progress. This lecture is appropriate for clinicians and those interested in blood tests, physical findings, underlying physiology and dietary cure of insulin resistance.

This lecture examines what the original China Study data really says about diet patterns and health, and also explores the real reasons vegetarian and vegan diets appear beneficial in population studies.
Pentti J. Nupponen, DMD, MAGD, CNC, FIAOMT: Detoxification and Healing the Old-Fashioned Way
Clay is an age-old detoxification and healing modality that has been used instinctively by living creatures for over 30,000 years. The urge to come up with an instant and easy solution to hypertension has driven the salt reduction agenda in this country. Policy makers, under pressure from many sides, have chosen to ignore the preponderance of clinical evidence and are pursuing a strategy of population-wide salt reduction. This presentation will provide several recent and surprising peer-reviewed studies that seriously challenge this strategy because of the unintended health consequences expected to result from it.
Michael Schmidt: Bio-Dynamic Farming – Looking beyond the concept of food quality and marketing
Pam Schoenfeld: Vitamin B6, the underappreciated B-vitamin Vitamin B6 is extremely important for human health, playing a myriad of roles in the body. Lack of adequate dietary B6 can lead to wide range of physical and mental symptoms. Unfortunately, modern diets often provide low levels of vitamin B6 and the recommended governmental dietary intakes are proving to be inadequate to support optimal health. Conventional medicine overlooks the importance of vitamin B6, including during critical times of development such as pregnancy. Pam will discuss how to meet your needs of vitamin B6 through a traditional diet, including how food preparation affects B6 levels, why taking supplements may not be the best way to meet your needs, and why it is so important to ensure that you are consuming enough vitamin B6 for optimal health. Emerging research will also be presented.
Stephanie Seneff, PhD: 1. Cholesterol, Sulfur, Lactate, and Sunlight: a New Paradigm for Health.
Through intensive research over the last several years, I have come to attribute much of what’s wrong with American health to excess dietary sugar and insufficient sun exposure, leading, somewhat counterintuitively, to a grave deficiency in cholesterol sulfate. In this talk, I will first explain why foods that contain an abundance of carbohydrates, particularly high fructose corn syrup, are harmful to health. I will then show why foods that are high in cholesterol are especially nutritious. I will show through demographics that places where sulfur is abundant have low rates of obesity and heart disease. I will introduce a novel theory proposing that the skin synthesizes cholesterol sulfate from hydrogen sulfide and cholesterol upon exposure to sunlight, and that the muscles and other cells utilize cholesterol sulfate to maintain ionic charge and to manage safe transport of oxygen and glucose. I will also argue why consumption of fermented foods (i.e., lactate) is a healthy choice.
2. Autism, Vaccines, and Cholesterol Sulfate
The autism community has long maintained that vaccines are contributing to the rising incidence of autism in the United States, and, increasingly, worldwide. This is something that the industry vehemently denies, and, thus, much controversy surrounds this issue. Through my research, I have reached the conclusion that vaccines are very damaging to a vulnerable segment of the population, and that they contribute significantly to the observed increased occurrence of autism. I will introduce a theory that autism is caused by a combination of a gross deficiency in sulfur-containing biologically active molecules, most critically the sulfate anion, and exposure to toxic cations like aluminum and mercury, mainly from excessive vaccination. I will provide compelling evidence both from the literature and from my own experiments with the CDC’s VAERS (Vaccine Adverse Reaction Reporting system) database.
3. How Statins Really Work Explains Why They Don’t Really Work
The statin industry has enjoyed enormous profits as ever more people are judged to qualify for statin therapy. Statins interfere with a central step in a major biological pathway, disrupting many cellular processes. Cholesterol is what gives animals both movement and a nervous system, compared to plants, and it is thus no accident that many statin drug side effects are closely tied to problems with muscles and the nervous system. In this talk, I will first show that the increased administration of statin therapy over the last few decades has not led to a decreased incidence of heart disease. I will present several research studies showing that statins are associated with impairment in cognition and memory, as well as severe damage to the muscles. I will provide evidence that statins may be a major contributor to the alarming increases seen in recent decades in heart failure, as well as to the MRSA (Methicillin-resistant Staphylococcus aureus) outbreaks in hospitals. In rare cases, statins can lead to serious conditions like neuropathy, Parkinson’s disease, and ALS. I will conclude with some results from a study I have conducted with my students on statin side effect reports from the Web. The simple story is that statins make you grow older faster.
Ritchie Shoemaker, MD: Inflammation and capillary hypoperfusion dominate dietary recommendations in patients sickened by exposure to the interior environment of water damaged buildings
Too often, dietary suggestions are made glibly, with little thought invested and little attention paid to the metabolic demands seen in the human host injured by water-damaged buildings (WDB). The requirement for custom-tailoring of dietary intervention in patients sickened by exposure to the interior environment of WDB serves as a classic example of the need to understand (1) leptin resistance; (2) the adverse effect of reduction of flow in capillary beds on oxygen delivery and mitochondrial activity; (3) the role of inhibition of direct beta-oxidation of fatty acids and protein wasting; and (4) the adverse effects of rising levels of insulin on inflammatory processes. Dietary suggestions based on assessment of energy needs in a setting of reduced anaerobic threshold will provide excellent results when combined with proper treatment of the underlying inflammatory condition. Attendees will learn what elements found inside WDB contribute to illness; what the mechanism of illness is; what therapies are employed for these patients and what dietary recommendations make sense.
Matt Stone: Metabolism – For Health, Weight Loss, and Beyond Few know the central importance of the cellular metabolic rate in the prevention of the most common 21st century diseases – from common infectious illnesses to heart disease, cancer, type 2 diabetes, autoimmune disease of all kinds, infertility, obesity, and countless others. In fact, with the recent infatuation with calorie restriction and the fear of basic food components such as fat or carbohdyrates, it has become increasingly trendy to believe that a low metabolic rate is optimal – which has had incalculable costs to the health of many food and exercise fad followers. In reality, if your cells are not producing energy properly (one indicator would be a body temperature of less than 98.6 degrees F), it is impossible to metabolize and digest food properly no matter how “healthy” one’s diet and lifestyle is. A close look at the specifics of human physiology in response to various diet and lifestyle manipulation, the central importance of metabolic rate along with many myths surrounding it, the devastation incurred with the standard approach to weight loss, and more will be the focus of this talk. The information is so counter to widely held beliefs about exercise and nutrition that many will have an identity crisis by the end of the discussion!

Harvey Ussery: The Small-Scale Poultry Flock (Monday) The home poultry flock does not have to be an analog in miniature of huge, highly confined industrial flocks. This presentation will focus instead on an all-natural, whole-systems husbandry, in which we engage our poultry as partners in the total home food production enterprise–using them for tillage of weeds, developing new garden ground, natural insect control, and making compost. It will present strategies for providing the flock more natural, home grown feeds, increasing the quality of the birds’ diet while reducing feed costs and dependence on purchased inputs. It will discuss both starting chicks in a brooder, and doing so with natural mothers or “broody” hens. While the focus will be on chickens, other domesticated fowl will be considered–ducks, geese, turkeys, and guineas.
Trash to Treasure: Bioconversion of Organic “Wastes” (Saturday) Wendell Berry observed that our culture has a habit of taking a beautiful natural solution and splitting it neatly into two hideous, insoluble problems. There is no better example than our misuse of organic “wastes” such as food residuals, manures, and yard debris like grass clippings and leaves. The result is not only the loss of potential resources, but widespread pollution of soil and water systems. This presentation will explore options for turning “trash into treasure” through bioconversion of “wastes” using decomposer organisms like earthworms and black soldier fly grubs, yielding not only priceless soil amendments but live, high-potency feeds for poultry, pigs, and farmed fish. The presentation will include as well a dynamic model for composting based on chicken power.

David Wetzel: The talk will present the historical character of fish oils from biblical times to present day. And describe the variety of the tests and problems associated with attempting to put a historical food into today’s label requirements and drug like language typically associated with present day cod liver oil.
Louisa Williams, ND: Radical Medicine: Getting to the True Roots of Disease Many of us have gone to great lengths to feel better. And yet, for a significant percentage, the abundant energy, vitality, and feeling of well-being that define optimal health continue to elude us despite our most diligent efforts. Friday Evening – Radical Medicine: Removing the “Obstacles to Cure”
Adopting an organic and nutrient-dense Weston A. Price diet is essential for restoring and maintaining optimal health. However, it is also just as vital to remove the “obstacles to cure” in your life.
In the 1800s Dr. Samuel Hahnemann, the founder of homeopathy, railed against the use of toxic mercury in skin ointments and medications, calling it a major “obstacle to cure.” 200 years later mercury in the form of amalgam (“silver”) fillings continues to be a major obstacle to achieving good health, and recently has even been found to be a major cause of Alzheimer’s disease. Alan Yegerlehner: The Bigger Picture Alan will give you a picture of the farm, how it had its beginnings when David Jegerlehner immigrated from Switzerland in the 1850’s to Kate being the 7th generation to manage the farm. It is presently a bit over 200 acres. Our farm is an extension of our faith and ministry and we try to manage it as a whole. This whole includes our family goals, farm, community and customers.
We will take a look at our seasonal dairy grazing farm and some of the management practices. It will include many of the things that we have done over the years, what has worked, what has not, and many of the things that we just don’t know or understand yet.
We presently have a herd of about 70 milk cows. We make cheeses and a host of other raw dairy products, and also grass fed beef. In addition, we have produced whey fed pork and naturally suckled pastured veal. The cattle are 100% grass fed.
There is an on-farm store and at present we sell products at 2 farmers markets each year.
