It is so nice to see Mary speaking again. It is true that her work and accomplishments in promoting the truth about fats was never adequately recognized. The same can be said for Sally Fallon. Just look at what the Weston A Price Foundation has accomplished under her leadership.
Now the truth about soy problems is recognized, and well as the value of broth and fermented foods. It has become important to shop at farmers markets and buy nutrient dense real food from local farmers. People are loosing their fear of butter and loving its wonderful flavor and nutritional benefits again. Having a garden and being a farmer have become “cool.”
The US government now says we can eat cholesterol, but not yet saturated fat. But we hope that the importance of saturated fat will soon become recognized. There has been a lot of research in recent years proving the need for saturated fats. This June, 2020, an article in the Journal of the American college of Cardiology said government caps on saturated fats are no longer justified. Now we need to put real scientists on the Committee for the US Dietary Guideline who do not have vested interests, like Mary explains, effecting our policies.
