Here is what to do with extra rendered lard and if you want to eat more fat. The recipe can be halved and is easily adjusted according to taste. The more apple, the sweeter.
- 1 quart of rendered lard, with or without cracklings
- 3-4 onions
- 3-4 apples
- 2 good handfuls of kale or collards
- Fry chopped onions in part of the lard. When fried to your liking, add chopped greens, chopped apples and the rest of the lard.
- Cook until everything is soft. Let cool in frying pan. Fill into glass jars. Eat for a snack.
