
Here is yet another mayo recipe since some don’t enjoy what they describe as the bitter flavor of olive oil, and we don’t recommend avocado oil or any industrial seed oils such as canola oil. We also don’t recommend raw egg whites, only raw egg yolks, so that can make finding mayo recipes more complicated! See our position on avocado oil below the recipe list. Rather than our usual recipe of the week, this post includes links to a variety of recipes for mayo made with rendered bacon fat, also referred to as “baconnaise.” Bacon mayo is primarily made out of bacon fat and egg yolk. The egg yolk helps to form an emulsion. Vinegar or an acid like lemon juice is added to the egg yolk to help keep that emulsion together. Add mustard is an option!

Avocado Oil
Avocado oil is not regulated and is relatively new to the market. It is not a traditional fat and as such, the Weston A. Price Foundation prefers to err on the side of caution and recommend you avoid it. My husband recently discovered he has become allergic to avocados so we stopped using avocado oil. If he ever becomes allergic to bacon I will have to divorce him. Just joking. 🤣
