Ingredients
- Whole pasture-raised beef heart
- Homemade chipotle pepper – recipes
- Apple cider vinegar, to taste in marinate
- Hot sauce, to taste in marinate
- Shoyu, to taste in marinate
Instructions
- I simply sliced a whole beef heart into thin strips and made a simple marinade of salt, homemade chipotle pepper, apple cider vinegar, hot sauce, and shoyu.
- Let it hang out in the fridge about a day in the marinade and then dehydrated it at 150⁰ for about 10 hours.


Do I have to clean the heart removing all the connective tissue before slicing and marinating?
