Ingredients
1/2 gallon homemade chicken stock
1 quart heavy cream
1/2-1 pound good, ripe brie (brie with black truffles is even better!)
1/2 cup butter
1 medium onion, diced
2 Tbsp dried shiitake mushroom powder (optional, but good)
2 tsp ground mace *or* 1 tsp each ground mace & nutmeg
2 tsp unrefined sea salt
1/2 tsp ground black and/or white pepper
1 bay leaf
1 pound fresh or frozen broccoli florets
Sauté the onion in butter until soft in a heavy-bottomed soup pot, add the chicken stock. Add seasonings and bring to a simmer. Add broccoli and cook until soft. Add brie in chunks, simmer until soft and melted, then purée either with an immersion blender or in batches in a blender. Add heavy cream, and serve.
