Animal based sweets! I present to you the Creamed Honey Gummies. Three ingredients. Creamed raw honey, raw egg yolk, and grass fed gelatin. It’s so simple it’s kind of silly. Creamed honey and raw yolk mixed together. Set with gelatin at a low temperature to preserve all the raw honey goodness. It’s a lovely little treat. My kind of sweetness. It’s a love song to flowers. The nectar of wildflowers. The constant humming of bees. Of queens. And the humans who tend them.
Making creamed honey, also known as soft set honey is really easy. You just need a little already creamed honey and some raw honey. You whip the two together and you have yourself one of nature’s amazing treats! You can whip it longer than I did here for a little firmer texture but this worked for me. If you don’t have any creamed honey on hand you can probably get away with just whipping raw honey to make whipped honey and use it for this recipe instead.

Ingredients
- ½ cup raw honey
- 1 big tablespoon creamed honey
- 3 egg yolks
- 2 tablespoons of gelatin

- In a mixing bowl whip together the raw honey with the creamed honey until light in color and thick
- bloom your gelatin [To bloom powdered gelatin, simply place a small amount of cold water in a shallow bowl. Sprinkle the gelatin evenly over the top of the water. It will begin to absorb the water and swell in size. Let the mixture stand for 5 minutes before proceeding with the recipe. You will need about ¼ cup of water per ¼ oz of gelatin.]
- Whisk your yolks into your creamed honey one at a time
- Dissolve your bloomed gelatin into some just boiled water (about 1/4 cup of boiling water should do. Just keep stirring it, it should all dissolve!)
- Whisk your gelatin mixture into your honey yolk mixture. Doing it like this will keep everything cool and should keep everything raw. If you like a firmer gummy just use more gelatin.
- Immediately pour into your mold. I’m warning you, be quick here, because it’s going to start setting up really quick here. You probably have less than a minute from the time you whisk your gelatin in to when you need to get it in your mold.
- Transfer to the fridge and allow it to set up.
- Store in fridge.
