Last week I found myself with a case of cucumbers and no plan of action. Well, almost no plan of action. Last summer I was in a similar position but with summer squash. My solution was to peel and dehydrate small slices to make delicious chips. Applying the same simple logic to my mountain of cucumbers yielded an even better-tasting result. Sprinkle the slices with a bit of salt and garlic powder, and you’ll have a hard time stopping at just a handful. Raw, low-carb and crunchy, these cucumber chips are a fun snack to munch on any time.
Instructions
- Peel cucumbers.
- Slice cucumbers thinly.
- Arrange slices on dehydrator sheets and sprinkle with unrefined sea salt, garlic powder, or just leave plain.
- Dehydrate at 115°F for 12-15 hours or until crispy.
