This recipe reflects theΒ eighth of our 11 Wise Traditions Dietary Principles which is to include animal foods from both land and sea in your diet to balance omega-6 and omega-3 fatty acids. INGREDIENTS
- 1 lb of wild caught cod
- 2 pasture-raised eggs
- β to Β½ cup coconut flour
- 1 tsp garlic powder
- 1 tsp paprika
INSTRUCTIONS
- Cut 1 lb of cod into even strips.
- Whisk 2 eggs.
- Set up a two-step station: beaten eggs in one bowl, and coconut flour mixed with spices in the other.
- Dip each piece in the egg, then press lightly into the coconut flour.
- Cook in a hot skillet with coconut oil over medium heat for 3 to 4 minutes per side until golden, or bake at 375Β°F for 12 to 15 minutes.

TIPS FOR COCONUT FLOUR
- The recipe calls for less coconut flour than regular flour because it absorbs a lot of liquid.
- Be sure to mix it with an egg wash well so it does not turn powdery or dry.
- Do not use a thick layer, or the coating will taste heavy.
