QUESTIONS ANSWERED by Sally Fallon Morell
Q. I have been eating good quality liver each week and taking cod liver oil; might I be getting too much vitamin A?
A. This is not too much liver as long as it is balanced with foods rich in vitamin D. So cook the liver in bacon fat or lard, egg those pastured egg yolks, and take your cod liver oil for vitamin D. English blood sausage, if you can get it, is also a good source of vitamin D.
Q. My son is allergic to milk, egg and cod fish. Can you suggest good alternatives.
A. Alternatives would be other types of seafood and meat of all kinds, soups based on broth, etc. If your son does not tolerate butter, use ghee. Have you tried raw milk? Your son may tolerate that.
Q. I am adding nuts and seeds to bread. Do all of them need to be soaked (using walnuts, pumpkin, chia and flax)
A. Make crispy nuts of walnuts and pumpkin seeds. Flax seed and chia seed don’t need to be soaked.
Q. I am unclear what is lime water and whether I need to rinse the food after soaking it. Is it toxic?
A. Lime water is just calcium carbonate, so it is not toxic. But yes, rinse the lime water first and then soak the grains in an acidic medium, which you do not need to rinse out. But to make things easier, you can start with Masa flour, which has already been soaked in limewater.
Q. Is “palm olein oil” a good fat to eat? I know that palm oil is good but has palm olein oil been damaged during processing? My supermarket sells vegetable chips cooked in this oil.
A. Palm olein oil is the liquid fraction of the palm oil, with the saturated fat removed. As this is mostly monounsaturated oleic acid, this industrial fat would be better than other industrial oils (corn, soybean, etc); however, you are right, the pure palm oil would be a better choice.
