The content that follows is from Nourishing Traditions page 447 and 448. As sandwiches are a fixture on the American food scene, we should make every attempt to prepare them with nutritious ingredients. Fundamental to this effort is avoidance of the usual sandwich ingredients—preserved meats, condiments containing sugar and polyunsaturated oils, processed cheeses and unsuitable breads. This delicious sandwich is composed of four fermented foods or five if you use cultured butter.
Ingredients
- Naturally leavened sourdough bread
- Thinly sliced corned beef
- Cultured butter
- Swiss cheese
- Sauerkraut
Instructions
- Spread sourdough bread with butter and fill with thinly sliced corned beef, thinly sliced Swiss cheese and sauerkraut.
- Sauté sandwich lightly on both sides in a small amount of butter or extra virgin olive oil until lightly browned and the interior is slightly warmed.
