Ingredients
- 4 Quarts Homemade Chicken Broth
- 2-3 cups Chicken
- 4 cups Cooked Black Beans – You can cook them yourself or use canned beans.
- 2-28 oz cans Canned Tomatoes – Crushed or diced tomatoes work best.
- 2-3 cups Corn – Fresh, frozen, or canned will work.
- 1 cup Dry Red Wine
- 2-3 Tablespoons Chili Powder
- Sea Salt – Add salt to taste.
Garnish
- Grated Jack Cheese
- Avocado – cut into cubes
- Tortilla Strips – fried in lard
Instructions
- Start by chopping up the meat.
- Add the chicken to your stockpot with the chicken broth.
- Add one cup of dry red wine.
- Add the beans and all the juice.
- Add two large cans of crushed tomatoes.
- Add corn.
- Add chili powder.
- Turn the burner on medium-high heat.
- Add a couple of teaspoons of salt to taste.
- Add garnish and enjoy.
