The fourth of our 11 Wise Traditions Dietary Principles includes the recommendation to eat some raw animal foods. Raw egg yolks is one way to do that! Please note that we don’t recommend raw egg whites, only the yolks. We do recommend pasture-raised eggs, ideally with soy and corn-free supplemental feed. Lemon curd is characterized as a versatile, tangy, and creamy spread prefect for elevating breakfast or desserts. Use it as a topping for pancakes, waffles, scones, or yogurt, or use it as a filling for tarts, cakes, cupcakes, and thumbprint cookies. It also works well swirled into raw ice cream, folded into raw whipped cream, or spread on toast and muffins. All of the following recipes are made with natural sweeteners such as honey or maple sugar.
