Jessica in the Kitchen Coconut Milk – note that we don’t recommend agave syrup, but would recommend the optional added date she includes if you’d like a sweetener.

TIPS
- First Press vs. Second Press: If you want thicker, creamier milkβlike canned coconut milkβuse less water, for example a 1:1 ratio of coconut to water. For a thinner, milk-like consistency, use up to 4 cups of water.
- Separation is Normal: Because there are no emulsifiers or preservatives, your homemade coconut milk will naturally separate into a thick, creamy layer on top and a watery layer on the bottom. Just give the jar a vigorous shake before using it.
- If Using Fresh Whole Coconut: Crack the coconut, pry the white meat from the shell, and peel off the thin, brown, papery skin using a vegetable peeler. Chop the white meat into small cubes and follow the exact same blending process.
Note that we have published a fair amount of content about coconuts and other recipes that feature it!
